HOMEMADE TEXAS SHEET CAKE RECIPE

Texas Sheet Cake Recipe
TEXAS CAKE (Sheet Cake Style)

1 cup homemade unsalted butter
1 cup water
3/4 cup baking cocoa
2 cups flour
2 cups white sugar
1 tsp baking soda
1/2 tsp salt
2 eggs
1/2 cup sour cream

PREHEAT oven to 350 degrees and grease a 15x10x1 inch pan.

In a large saucepan, bring the butter, water and cocoa to a boil. Remove from the heat. Combine the flour, sugar, baking soda and salt; stir into butter mixture. Combine the eggs and sour cream; stir into butter mixture until blended.

Pour into a prepared pan. Bake for 18-25 minutes or until a toothpick inserted near the center comes out clean. Frost with warm icing and cool on a wire rack.


Chocolate Icing

1-1/2 cup semisweet chocolate chips
6 TBS homemade unsalted butter
2 TBS light corn syrup
1/2 teaspoon homemade pure vanilla extract

Mix ingredients together in a microwave safe bowl. Microwave 45 seconds, stir, microwave 45 seconds, stir. If needed, microwave in 15 second intervals, just remember to stir. Use it while it is warm.

FRESH CHICKEN SALAD RECIPE

3/4 cup homemade mayonnaise
1/4 cup homemade cherry conserve
1/2 tsp curry powder
1/4 tsp salt
12 ounces crushed pineapple, well drained and squeezed dry
1/4 tsp lemon juice
2 cups finely chopped cooked chicken
1 cup finely diced celery
1/2 cup sliced green onion

First combine the mayonnaise, chutney, curry powder and salt. Add remaining ingredients - chill before serving.
