taco recipes
This taco recipe is pure and authentic. You may grill the steak if you want - a wonderful flavor.

STEAK TACOS

2 pounds top sirloin steak, cut into thin strips
salt and pepper to taste
1/4 cup vegetable oil
18 (6 inch) corn tortillas
1 medium onion, diced
4 fresh jalapeno peppers, seeded and chopped
4 limes, cut into wedges
1 bunch fresh cilantro, chopped

Marinate the sliced steak with a little fresh squeezed lime, salt, and pepper for about 10 or 15 minutes (just long enough to have a Corona) before you seared it in a cast iron skillet.

Heat a large cast iron skillet over medium-high heat. Fry the steak strips, stirring constantly, until browned on the outside and cooked through, but not too firm, about 5 minutes. Season with salt and pepper. Remove to a plate and keep warm.

Heat the oil in the skillet, and quickly fry each tortilla on both sides, until it puffs, flip and remove immediately. Wrap in foil and place in warm oven.

Place tortillas on a plate, and top with steak strips, onion, jalapeno, and cilantro to taste. Squeeze lime juice over. Wrap and eat.

Taco Recipes
Nothing tastes better than this taco recipe. You can grill steak with it too. Delish.

GRILLED CHICKEN TACOS

1 1/2 pounds skinless, boneless chicken breast, sliced in strips
1/8 cup red wine vinegar
1 lime, juiced
1 teaspoon white sugar
1/2 tsp salt
1/2 tsp ground black pepper
2 green onions, chopped
2 cloves garlic, minced
1/4 cup chopped cilantro
1/2 cup guacamole, recipe above
10 (6 inch) flour tortillas
1 tomato, diced
1/4 cup shredded lettuce
1/4 cup shredded Co-Jack cheese
1/4 cup salsa, recipe above

Add vinegar, lime juice, sugar, salt, pepper, green onion, garlic and oregano and let chicken marinate for 30 minutes. Grill and brush with marinade until cooked through. You can also saute chicken in the marinade in a skillet. Set aside.

Heat a cast iron skillet over medium heat. Place a tortilla in the pan, warm, and turn over to heat the other side. Repeat with remaining tortillas. Serve lime chicken mixture in warm tortillas topped with tomato, lettuce, cheese, guacamole and salsa.

NOTE:
Instead of sauteing or grilling the lime chicken, you can boil the chicken breasts until cooked through and then shredded them. Then cook the chicken with the liquids for about 10 minutes, til it had absorbed the flavors.
