HOMEMADE SALTED PEANUT CAKE

If you have never made a homemade Salted Peanut Cake, you must try this old fashioned cake recipe. I loved it when I was young, and still do today. Top with whipped cream or my homemade frosting recipe. More homemade cake recipes at the bottom of the page...

OLD FASHIONED PEANUT CAKE

1/2 cup homemade unsalted butter
1 cup sugar
1 egg
1 cup homemade buttermilk
1 tsp baking soda
1-3/4 cup flour
1 cup salted peanuts, shelled and ground with skins on

PREHEAT oven to 375 degrees. Lightly spray a 9x12" baking pan with vegetable oil; set aside.

Sift the dry ingredients together. Cream butter and sugar together until light and fluffy. Add the egg and ground peanuts (save some for the frosting); mixing well.

Alternate adding the dry ingredients with the buttermilk; ending with the buttermilk. Spread evenly into the prepared pan. Bake for 30 to 35 minutes or until a toothpick inserted in the center comes out clean.

Top with your favorite frosting after the cake cools and sprinkle the reserved nuts over the top. I like my Whipped Cream Frosting.

FRESH CHICKEN SALAD RECIPE

3/4 cup homemade mayonnaise
1/4 cup homemade cherry conserve
1/2 tsp curry powder
1/4 tsp salt
12 ounces crushed pineapple, well drained and squeezed dry
1/4 tsp lemon juice
2 cups finely chopped cooked chicken
1 cup finely diced celery
1/2 cup sliced green onion

First combine the mayonnaise, chutney, curry powder and salt. Add remaining ingredients - chill before serving.
