Luscious Homemade Dessert Recipes

Have you ever tried homemade Rocky Road Frosting on a dark chocolate cupcake? You don't know what you are missing. I am giving you a beautiful recipe for rocky road icing that dates back 60 years ago. This is one tasty frosting.



Rocky Road Frosting
1 (6oz) pkg semisweet chocolate morsels
1/4 cup butter
3 cups powdered sugar, sifted
3 TBS scalded milk
1 tsp pure vanilla extract
1 egg
1-1/2 cups miniature marshmallows (or to taste)


1/2 cup walnuts (or to taste), chopped
marshmallow fluff
chocolate syrup, garnish
caramel, garnish

Melt the chocolate in a heatproof bowl set over simmering water; then set aside to cool.

Mix the butter with the sugar and beat until light and fluffy. Add the milk and vanilla and mix well. Add the egg and beat until thoroughly combined. Now add the chocolate; stirring until well blended. Stir in the marshmallows and chopped walnuts.

GARNISHING
You can also use marshmallow fluff and put teaspoon dollops (or pipe it) on the cake after it is frosted. Then drizzle with chocolate and caramel.

FRESH CHICKEN SALAD RECIPE

3/4 cup homemade mayonnaise
1/4 cup homemade cherry conserve
1/2 tsp curry powder
1/4 tsp salt
12 ounces crushed pineapple, well drained and squeezed dry
1/4 tsp lemon juice
2 cups finely chopped cooked chicken
1 cup finely diced celery
1/2 cup sliced green onion

First combine the mayonnaise, chutney, curry powder and salt. Add remaining ingredients - chill before serving.
