Pound Cake Recipes
Another one of my recipes is this homemade lemon poundcake. The yogurt makes it so moist. An awesome southern pound cake, if I say so myself...

LEMON POUND CAKE RECIPE

2-1/4 cups flour
1-1/4 cups white sugar
1 tsp salt
1/2 tsp baking soda
2 tsp fresh lemon peel, grated
2 tsp pure vanilla extract
1/2 cup shortening
1/2 cup homemade unsalted butter, softened
1 cup homemade lemon yogurt
3 eggs

PREHEAT oven to 325 degrees. Lightly grease and flour a tube pan and set aside.

Sift the dry ingredients together and place in a large bowl. Beat the eggs, shortening and butter; until light and fluffy. Add the dry ingredients a little at a time and mix well. Now add the lemon yogurt and beat for 3 minutes.

Pour into the prepared pan and bake for 50-60 minutes, or when a toothpick inserted in the center of the cake comes out clean. Poke a few holes in the cake with a toothpick or knife.

LEMON GLAZE:
Juice of 1 lemon
1 cup powdered sugar
1/2 tsp fresh lemon zest

Mix the lemon juice with the powdered sugar and drizzle over warm pound cake. Sprinkle with lemon zest.




Pound Cake Recipes
Here's another pound cake recipe with a twist. Buttery, rich dense and almost velvety are a few words that come to mind when I eat this homemade cream cheese pound cake.

You must make this cake 1 day before serving. This cake freezes well and is so easy to make.




CREAMY AND VELVETY CREAM CHEESE POUND CAKE

1 pkg cream cheese, softened
1-1/2 cups butter, softened
3 cups white sugar
6 eggs
3 cups flour, sifted
1/2 tsp salt
1 TBS pure vanilla extract

PREHEAT oven to 300 degrees (nothing higher) and grease a tube or bundt pan.

Cream the first 3 ingredients together until light and fluffy. Add the eggs one at a time, and mix well after each addition. SLOWLY add the flour and vanilla and mix well. Bake for approximately 1-1/2 hours. Moist and scrumptious homemade poundcake recipe.

FRESH CHICKEN SALAD RECIPE

3/4 cup homemade mayonnaise
1/4 cup homemade cherry conserve
1/2 tsp curry powder
1/4 tsp salt
12 ounces crushed pineapple, well drained and squeezed dry
1/4 tsp lemon juice
2 cups finely chopped cooked chicken
1 cup finely diced celery
1/2 cup sliced green onion

First combine the mayonnaise, chutney, curry powder and salt. Add remaining ingredients - chill before serving.
