You will love this pork tacos recipe. Why? The homemade marinade I use takes this dish over the top. Start the night before and let the pork soak up the flavors and it will fall off the bone.




Pork Tacos Recipe
BEST PORK TACOS
(Pork Carnitas Recipe)

3 lbs pork shoulder loin (or country-style ribs)
1 tsp freshly ground black pepper
2 TBS cumin



3 TBS homemade chili powder
1 TBS homemade cayenne pepper
1 tsp homemade garlic powder
1 tsp homemade onion powder
4 whole garlic cloves
2 bay leaves
2 cups oil (canola, olive oil)
8 to 12 homemade corn tortillas

Garnish
diced onion
guacamole, recipe below
chopped cilantro
chopped tomatoes
lime

Put meat in a 9x13 inch dish. Mix the dry ingredients with the oil and pour over the meat. Marinate overnight or for a minimum of 6 hours, covered in the refrigerator.

PREHEAT oven to 350 degrees and bake uncovered for 45 to 60 minutes. When cooled, chop meat into cubes or pull into strips. Serve on corn tortillas and top with garnishes listed. Squeeze with fresh lime before serving.




These recipes are just guidelines, so if you love heat or cilantro, please add more.

EASY GUACAMOLE RECIPE

3 fresh ripe avocados - peeled, pitted, mashed
2 Roma tomatoes, chopped
3 TBS fresh cilantro, chopped
1/2 cup onion, chopped
1 jalapeno, chopped
1 fresh lemon, juiced
1 tsp kosher salt
1 tsp fresh garlic, minced

In a large bowl, mash the avocados and add the lime juice and salt; mix well to combine. Add the remaining ingredients and mix well. Chill for at least 1 hour before serving.

FRESH CHICKEN SALAD RECIPE

3/4 cup homemade mayonnaise
1/4 cup homemade cherry conserve
1/2 tsp curry powder
1/4 tsp salt
12 ounces crushed pineapple, well drained and squeezed dry
1/4 tsp lemon juice
2 cups finely chopped cooked chicken
1 cup finely diced celery
1/2 cup sliced green onion

First combine the mayonnaise, chutney, curry powder and salt. Add remaining ingredients - chill before serving.
