Homemade Italian Pasta Recipes

Authentic Italian Tomato Sauce Recipe


I have many homemade pasta filling recipes for you to try. I also offer tips on making various pasta for these fillings. Old fashioned Italian recipes to start your own family tradition available to you now.



Pasta Filling Recipes
These fillings can be used to stuff your homemade pasta (manicotti, ravioli, jumbo shells, etc).

Mix and match with my basic pasta sauce, or your favorite sauce. Use mushrooms instead of spinach; the possibilities are endless. Stuffed pastas are wonderful with garlic butter sauce.


Ricotta Filling

2 cups ricotta cheese
2 beaten eggs
1/2 cup Romano cheese, grated
3 TBS parsley, chopped
1 tsp salt
1/4 tsp pepper
1/4 tsp oregano
1/4 tsp homemade garlic powder
1/4 tsp homemade onion powder

Combine ingredients in a bowl; mix well. Makes 2-1/2 cups.




Spinach and Ricotta Filling

1 cup ricotta cheese
1 pkg (10oz frozen) spinach, thawed and pureed - drain well
2 eggs, beaten
1/2 cup Romano cheese, grated
1 tsp parsley, chopped
1 tsp salt
1/4 tsp pepper
1/4 tsp oregano
1/2 tsp homemade garlic powder
1/2 tsp homemade onion powder

Mix well - Makes 2 cups.




Chicken, Ricotta and Spinach Filling

1 cup cooked chicken, minced
1 cup ricotta cheese
1 pkg (10oz frozen) spinach, thawed and pureed - drain well
2 eggs, beaten
1/2 cup Romano cheese
1/2 tsp homemade garlic powder
1/2 tsp homemade onion powder
2 TBS parsley, chopped
1/2 tsp salt
1/4 tsp pepper
1/4 tsp oregano
1/4 tsp nutmeg

Mix well - Makes 3 cups.





Chicken Filling

2 cups cooked chicken, minced
2 eggs
2 TBS parsley, chopped
1/2 cup Romano cheese, grated
1 tsp salt
1/4 tsp pepper
1/4 tsp nutmeg

Mix well - Makes 2 cups.





Sausage and Ricotta Filling

3/4 lb Italian bulk sausage (or ground beef)
2 cups ricotta cheese
1/2 cup Romano cheese, grated
3 eggs
1 tsp salt
1/4 tsp pepper
1/2 tsp homemade garlic powder
1/2 tsp homemade onion powder
1/4 tsp oregano

Mix well - Makes 3 cups.

Veal Filling

1-1/2 lb ground veal
3 eggs, beaten
1/2 cup Romano cheese, grated
1 TBS parsley, chopped
1 tsp salt
1/4 tsp pepper
1/2 tsp homemade garlic powder
1/2 tsp homemade onion powder
1/4 tsp nutmeg

Mix well - Makes 3 cups.

FRESH CHICKEN SALAD RECIPE

3/4 cup homemade mayonnaise
1/4 cup homemade cherry conserve
1/2 tsp curry powder
1/4 tsp salt
12 ounces crushed pineapple, well drained and squeezed dry
1/4 tsp lemon juice
2 cups finely chopped cooked chicken
1 cup finely diced celery
1/2 cup sliced green onion

First combine the mayonnaise, chutney, curry powder and salt. Add remaining ingredients - chill before serving.
