HOMEMADE ORANGE CAKE RECIPES

If you like oranges, you are going to love these old fashioned orange cake recipes. Moist and tender, the first recipe consists of chopped orange slices, and a glaze that soaks into the cake overnight.

Orange Cake Recipe
ORANGE SLICE CAKE RECIPE

1 cup homemade unsalted butter
2 cups white sugar
4 eggs
1/2 cup homemade buttermilk
1 tsp baking soda
3-1/2 cups flour
1/2 lb dates, pitted and chopped
1 lb orange slices candy, chopped
1 tsp homemade pure vanilla extract
2 TBS grated orange peel
2 cups pecans, chopped
1 cup flaked coconut

Glaze
1 cup fresh orange juice
2 cups homemade powdered sugar

PREHEAT oven to 325 degrees. Grease and flour a large loaf pan; set aside.

Cream the butter and the sugar together until light and fluffy. Add the eggs, one at a time beating after each addition. Dissolve the baking soda in the buttermilk and add it to the egg mixture, beating well.

In a large bowl mix the flour, dates, candy, nuts and coconut. Mix to coat. Add the flour mixture to the creamed mixture and combine well. Dough will be very stiff and may require mixing with your hands. Place dough into the prepared pan.

Bake for 1-1/2 to 2 hours. Cake is done when a toothpick inserted in the center comes out clean. Mix the orange juice and confectioners' sugar together and heat in a small saucepan. Make a few holes in the cake with a butter knife. Pour the glaze over the hot cake and let cake stand in pan overnight before serving.



This is a delight on a hot summer day.

ORANGE CREAMSICLE CAKE RECIPE

18.25 oz box of white cake mix
3 oz package orange flavored gelatin mix
1 cup hot water
1/2 cup orange juice (or orange soda)
8 oz tub frozen whipped topping, thawed
3.5 oz package instant vanilla pudding mix
1 cup milk
1 tsp homemade pure vanilla extract
2 TBS orange zest
mandarin orange segments, for garnish

Bake the cake according to package directions. Let the cake cool and poke holes evenly in the cake with a fork.

Mix the gelatin with the hot water and then the cold water. Pour this mixture evenly over the cooled cake.

Combine the thawed whipped cream, instant vanilla pudding, milk, vanilla and orange zest. Beat until mixed well and thickened. Spread evenly over the cake and refrigerate for at least one hour before serving.

Variations:
Try using a white cake mix with 1/2 cup grape juice (instead of orange juice) and garnish with grapes.

Use a yellow cake mix with 1/2 cup pineapple juice (instead of orange juice) and garnish with pineapple.

QUICK ORANGE CAKE

18.25 ounce yellow cake mix
4 eggs
3/4 cup vegetable oil
1 tsp orange extract
11 ounce can mandarin orange segments
8 oz tub Cool Whip, thawed
20 ounce can crushed pineapple with juice
3.5 ounce package instant vanilla pudding mix

PREHEAT oven to 350 degrees. Grease and flour 9x13 inch pan.

Combine the cake mix, eggs, oil, orange extract, mandarin oranges and juice. Beat until smooth and pour into prepared pan. Bake for 35 to 40 minutes or until toothpick comes out clean.

Topping
Beat whipped cream, pineapple with juice and dry pudding together until smooth and creamy. Frost the cake and chill before serving.

FRESH CHICKEN SALAD RECIPE

3/4 cup homemade mayonnaise
1/4 cup homemade cherry conserve
1/2 tsp curry powder
1/4 tsp salt
12 ounces crushed pineapple, well drained and squeezed dry
1/4 tsp lemon juice
2 cups finely chopped cooked chicken
1 cup finely diced celery
1/2 cup sliced green onion

First combine the mayonnaise, chutney, curry powder and salt. Add remaining ingredients - chill before serving.
