This old fashioned meatloaf recipe is a keeper. It's at least 60 years old and still wonderful today (aren't they all?). Flavored perfectly with an optional savory mushroom blend - your family will agree after the first bite. Serves 6.
PREHEAT oven to 350 degrees and spray a loaf pan with vegetable oil.
Mix by hand the meatloaf ingredients in a large bowl. Shape into an 8x4 inch loaf pan. Bake for 1 hour, or until done.
Remove from oven. To prepare the gravy, melt the butter in a saucepan over medium heat. Add mushrooms and onions and sprinkle with the garlic and onion powders. Saute until tender. Add beef broth, beef bouillon and simmer for 10 minutes, stirring occasionally. Combine the water with the cornstarch and add to the mixture, stirring well until gravy thickens. Serve over meatloaf with mashed potatoes and fresh homemade bread.
3/4 cup homemade mayonnaise 1/4 cup homemade cherry conserve 1/2 tsp curry powder 1/4 tsp salt 12 ounces crushed pineapple, well drained and squeezed dry 1/4 tsp lemon juice 2 cups finely chopped cooked chicken 1 cup finely diced celery 1/2 cup sliced green onion
First combine the mayonnaise, chutney, curry powder and salt. Add remaining ingredients - chill before serving.
