This old fashioned meatloaf recipe is a keeper.
It's at least 60 years old and still wonderful today (aren't they all?). Flavored perfectly with an optional savory mushroom gravy.
1 tsp homemade garlic powder
1 tsp homemade onion powder
1/4 tsp salt
1/4 tsp ground black pepper
Mushroom Gravy (optional)
2 TBS homemade unsalted butter
2 cups fresh mushrooms, sliced
1/2 tsp homemade garlic powder
1/2 tsp homemade onion powder
1/4 cup onion, finely chopped
1/2 tsp (to taste) beef bouillon granules
1 cup homemade beef broth
2 TBS water
1 TBS cornstarch
PREHEAT oven to 350 degrees and spray a loaf pan with vegetable oil.
Mix by hand the meatloaf ingredients in a large bowl. Shape into an 8x4 inch loaf pan. Bake for 1 hour, or until done.
Remove from oven. To prepare the gravy, melt the butter in a
saucepan over medium heat. Add mushrooms and onions and sprinkle with
the garlic and onion powders. Saute until tender.
Add beef broth, beef bouillon and simmer for 10 minutes, stirring occasionally. Combine the water with the cornstarch and add to the mixture, stirring well until gravy thickens. Serve over meatloaf with mashed potatoes and fresh homemade bread.
