HOMEMADE MUSHROOM SAUCE
3 TBS oil 1 lb fresh mushrooms, sliced 2 medium onions, finely chopped 3 garlic cloves, minced 1 can (28 oz) plum tomatoes 1 can (6 oz) tomato paste 3/4 cup water 3 fresh basil leaves or 1/4 tsp dried 1 tsp salt 1/2 tsp homemade garlic powder 1/2 tsp homemade onion powder 1 TBS chopped parsley 1/4 tsp pepper 1/4 tsp oregano
Heat oil in heavy skillet over medium heat and add the mushrooms, chopped onions, onion powder, minced garlic and garlic powder.
Cook, stirring occasionally until the onions are transparent. Add the tomatoes, crushing them in your hand as you add them, and pour in juice from the can. Bring to a boil.
Lower heat and simmer uncovered for 1-1/2 to 2 hours. Stir occasionally. Enjoy.
3/4 cup homemade mayonnaise 1/4 cup homemade cherry conserve 1/2 tsp curry powder 1/4 tsp salt 12 ounces crushed pineapple, well drained and squeezed dry 1/4 tsp lemon juice 2 cups finely chopped cooked chicken 1 cup finely diced celery 1/2 cup sliced green onion
First combine the mayonnaise, chutney, curry powder and salt. Add remaining ingredients - chill before serving.
