LEMON COOKIE RECIPES - OLD FASHIONED LEMON COOKIE RECIPES

Scrumptious Dessert Recipes

These lemon cookie recipes are a breeze to make; refreshing and delicious. I offer many heirloom cookie recipes and old fashioned dessert recipes for you to try.



Lemonade Cookies
LEMONADE COOKIES

1 cup homemade unsalted butter
1-1/4 cup white sugar
2 eggs
1 tsp baking soda
3 cups sifted flour
6 ounce can frozen lemonade concentrate, thawed

PREHEAT oven to 400 degrees.

Cream butter and 1 cup of the sugar until light and fluffy. Add eggs and beat well.

Sift together baking soda and flour; stir into egg mixture alternately with 1/2 cup lemonade concentrate.

Drop by teaspoons 2 inches apart on ungreased sheets. Bake 8 minutes or until cookie edges are lightly browned.

Remove from oven and brush lightly with remaining concentrate and sprinkle with remaining sugar. Cool on wire racks.






LEMON CREAM CHEESE COOKIES

1 cup butter, softened
3 ounces cream cheese, softened
1 cup white sugar
1 egg yolk
1/2 tsp lemon extract
1 tsp fresh lemon zest
2-1/2 cups sifted flour
1/2 tsp salt

PREHEAT oven to 350 degrees.

Cream butter and cream cheese together and add sugar; beating until fluffy. Add egg yolk, lemon extract and lemon zest; beat until light.

Add sifted flour and salt; mix well. Force through spritz gun or cookie press onto ungreased cookie sheets. Decorate as desired. Bake for 15 minutes.






LEMON COOKIE RECIPE

1 cup butter
1 cup homemade powdered sugar
1 egg, beaten
4 tsp lemon extract
2 cups flour
1-1/4 tsp baking powder
white sugar

PREHEAT oven to 375 degrees.

Cream butter well; add powdered sugar slowly and beat until creamy. Add egg and lemon extract.

Sift flour and baking powder together; add to lemon mixture. Take 1 tsp of dough and form into a ball; press flat with a glass that has been lightly oiled and dipped in sugar.

Sprinkle 1/2 teaspoon of sugar over the top of each flattened cookie. Place pan on grate close to the top of the oven. Bake until light colored.

FRESH CHICKEN SALAD RECIPE

3/4 cup homemade mayonnaise
1/4 cup homemade cherry conserve
1/2 tsp curry powder
1/4 tsp salt
12 ounces crushed pineapple, well drained and squeezed dry
1/4 tsp lemon juice
2 cups finely chopped cooked chicken
1 cup finely diced celery
1/2 cup sliced green onion

First combine the mayonnaise, chutney, curry powder and salt. Add remaining ingredients - chill before serving.
