If you like lemons, you will LOVE this lemon bread recipe. So moist, and I give you variations like Lemon Blueberry Bread which is amazing. I offer cranberry bread, peach bread, mango bread, strawberry and many more below.
LEMON BREAD RECIPE
1 cup white sugar 1/2 cup shortening 2 eggs, beaten 1-1/2 cups flour 1/2 tsp salt 1 tsp baking powder 1/2 cup milk two lemons, juiced one of the lemons, grated
Glaze (optional) 6 TBS (1/2 cup plus 2 TBS) homemade powdered sugar 1 TBS butter, melted 2 TBS fresh lemon juice
PREHEAT oven to 325 degrees. Grease and flour a loaf pan; set aside.
Cream together the sugar and shortening. Add the beaten eggs and mix well. Sift the flour, salt and baking powder together and add this to the creamed mixture alternating with the milk.
Fold in the juice and grated rind. Bake for 1 hour and 10 minutes. Drizzle with glaze.
For Lemon Blueberry Bread:
Add 1 cup fresh or frozen blueberries 2 TBS flour
Cover the blueberries with flour and fold in with the lemon juice and grated rind.
Here's another wonderful recipe for lemon bread.
2/3 cup butter, melted 2 cups white sugar 4 eggs 1/2 tsp almond extract 3 cups sifted flour 2-1/2 tsp baking powder 1 tsp salt 1 cup milk 2 lemons, grated and juiced 2 cup chopped nuts (optional)
PREHEAT oven to 350 degrees. Grease two loaf pans and line with parchment paper.
Blend sugar and butter. Add eggs, one at a time - then almond extract and lemon rind. Sift dry ingredients together and add alternately with milk. Fold in nuts if you are using them. Pour into pans and bake for 50 minutes.
GLAZE Mix the lemon juice with 1/2 cup white sugar. Immediately spoon over the hot bread. Let sit in pan for 10 minutes. Remove and do not slice for 24 hours. Yum.
3/4 cup homemade mayonnaise 1/4 cup homemade cherry conserve 1/2 tsp curry powder 1/4 tsp salt 12 ounces crushed pineapple, well drained and squeezed dry 1/4 tsp lemon juice 2 cups finely chopped cooked chicken 1 cup finely diced celery 1/2 cup sliced green onion
First combine the mayonnaise, chutney, curry powder and salt. Add remaining ingredients - chill before serving.
