RECIPE TIP
Pasta that is to be baked after cooking should be a little underdone or just al dente when you take it from the pot. Rinsing it in cold water keeps it from sticking and stops the cooking process. It will cook more when it is baking.
HOMEMADE SAUSAGE PIE
1/2 lb sweet Italian sausage
pie crust, recipe below
1-1/2 cups elbow macaroni, cooked and rinsed in cold water
8 eggs, beaten
1/2 cup grated Romano cheese
1 tsp salt
1/4 tsp pepper
1/4 tsp dried oregano
1/4 tsp garlic powder
1 tsp fresh parsley, chopped
PREHEAT oven to 375 degrees.
Put the sausages into a shallow baking pan and bake for 40 minutes, turning them halfway through cooking process. Cut into 1/4 inch pieces.
Reduce heat to 350 degrees.
Prepare the pie crust. Roll one pastry circle around the rolling pin and unroll into a 9 inch pan. Cut the dough evenly 1/2 inch from the edge of the pan.
Combine the sausages with the remaining ingredients. Pour into pie pan and cover with the top crust. Fold the edges under and flute. Cut a few slits in the top and brush with the egg mixture. Bake for 1 hour.
PIE CRUST
2-1/4 cups flour
1 tsp salt
2/3 cup lard
1/4 tsp vinegar
4 TBS ice cold water
1 egg beaten with 1 TBS water
Combine the flour and salt in a mixing bowl. Cut in the lard until the dough is coarse meal. Mix in the vinegar and then the water, 1 tablespoon at a time, until the dough almost cleans the side of the bowl.
Form into two balls. Roll each out on a slightly floured surface until it is 2 inches larger than the inverted 9 inch pie pan. Makes two 9 inch crusts.
