I am going to tell you how to make pasta. Don't worry, it's easy. If you think your soup is good with store-bought noodles, just wait till you taste it with homemade pasta. Casseroles are outstanding; you just don't know what you are missing...
Try making them next time you prepare your favorite soup or stew. Don't forget that fresh pasta cooks much quicker than dried. You may use a dough hook attachment on your electric mixer, or do it the old-fashioned way; use your hands.
HOMEMADE NOODLE RECIPE
1 beaten egg 1/2 tsp salt 1 cup flour 1/2 tsp baking powder (optional) 2 TBS cold milk
Combine egg, salt, milk. Add flour. (For thicker noodles add baking powder to flour before mixing.) Separate into two balls. Roll out dough, and let stand for 20 minutes.
Cut into strips and spread to dry; dusting with a little flour. Allow two hours drying time.
Now you can just drop into homemade soup. These noodles take 10 minutes to cook. You may also boil them in salted water; drain, and add to casseroles.
TIPS: For distinct flavor - add any spice that you like. Try adding parsley, garlic, or basil to the dough. Very tasty.
3/4 cup homemade mayonnaise 1/4 cup homemade cherry conserve 1/2 tsp curry powder 1/4 tsp salt 12 ounces crushed pineapple, well drained and squeezed dry 1/4 tsp lemon juice 2 cups finely chopped cooked chicken 1 cup finely diced celery 1/2 cup sliced green onion
First combine the mayonnaise, chutney, curry powder and salt. Add remaining ingredients - chill before serving.
