These homemade white sauce recipes sure come in handy when you want to make something quick like cheese sauce, chipped beef on toast, mushroom sauce (photo) and sausage gravy. Bechemal sauce is another name for white sauce among professionals.
BASIC WHITE SAUCE RECIPE All of these recipes make 1 cup of sauce
2 TBS butter 2 TBS flour 1/4 tsp salt 1 cup milk
In a small saucepan, melt the butter over low heat. Blend the flour into the melted butter and add the salt. Cook over low, stirring for 4 to 5 minutes to eliminate the "flour taste." Slowly whisk in the milk, constantly whisking and cooking until smooth and thick.
THIN WHITE SAUCE
Use 1 tablespoon of butter 1 tablespoon of flour
THICK WHITE SAUCE
Use 3 tablespoons of butter 3 tablespoons of flour
HEAVY WHITE SAUCE
Use 4 tablespoons of butter 4 tablespoons of flour
To make the standard Béchamel, after adding the milk to the medium white sauce recipe add 1 small onion studded with 3 cloves, a bay leaf, and a grating of nutmeg or cinnamon. This makes 4 cups of sauce.
In a medium saucepan, heat the butter over medium-low heat until melted. Add the flour and stir until smooth. Over medium heat, cook until the mixture turns a light, golden sandy color, about 6 to 7 minutes.
Meanwhile, heat the milk in a separate pan until just about to boil. Add the hot milk to the butter mixture 1 cup at a time, whisking continuously until very smooth. Bring to a boil. Cook 10 minutes, stirring constantly, then remove from heat. Season with salt and nutmeg, and set aside until ready to use.
3/4 cup homemade mayonnaise 1/4 cup homemade cherry conserve 1/2 tsp curry powder 1/4 tsp salt 12 ounces crushed pineapple, well drained and squeezed dry 1/4 tsp lemon juice 2 cups finely chopped cooked chicken 1 cup finely diced celery 1/2 cup sliced green onion
First combine the mayonnaise, chutney, curry powder and salt. Add remaining ingredients - chill before serving.
