Homemade stuffed peppers are a real treat when you use fresh bell peppers from your garden. This is a ground beef (you may also use chicken), rice and tomato sauce based stuffed pepper recipe that can be spiced up to your taste buds and topped with cheese.



Homemade Stuffed Peppers
STUFFED BELL PEPPER RECIPE

6 green bell peppers, steamed for 15 minutes
1 lb ground beef
1/2 cup uncooked long grain white rice
1 TBS homemade worcestershire sauce
1 tsp homemade garlic powder
1 tsp homemade onion powder
1 cup stewed or diced tomatoes
salt and pepper to taste
1 tsp Italian seasoning

Sauce
2 cups homemade tomato sauce
1 cup stewed tomatoes, (or diced)
2 garlic cloves, minced
1 small onion, chopped
dash of sugar

1-1/2 cups mozzarella cheese, shredded

Mix the raw ground beef with the uncooked rice, garlic and onion powder, worcestershire sauce, 1 cup diced or stewed tomatoes, Italian seasoning and salt/pepper to taste. Stuff peppers with this mixture. Spray a 9x13 inch pan with vegetable oil. Place stuffed peppers in the baking dish with hollow side (stuffed side) facing up.

Saute the onion and mix with the remaining tomato sauce ingredients. Pour sauce over stuffed peppers. Bake for 15 minutes. Top with the shredded cheese and bake another 15 minutes.

These can also be cooked in a crock-pot for 3 hours. During the last 30 minutes, top with cheese.

FRESH CHICKEN SALAD RECIPE

3/4 cup homemade mayonnaise
1/4 cup homemade cherry conserve
1/2 tsp curry powder
1/4 tsp salt
12 ounces crushed pineapple, well drained and squeezed dry
1/4 tsp lemon juice
2 cups finely chopped cooked chicken
1 cup finely diced celery
1/2 cup sliced green onion

First combine the mayonnaise, chutney, curry powder and salt. Add remaining ingredients - chill before serving.
