Another one of my recipes is this homemade lemon poundcake. The yogurt makes it so moist! An awesome southern pound cake, if I say so myself...

LEMON POUND CAKE RECIPE

2-1/4 cups flour
1-1/4 cups white sugar
1 tsp salt
1/2 tsp baking soda
2 tsp fresh lemon peel, grated
2 tsp pure vanilla extract
1/2 cup shortening
1/2 cup butter, softened
1 cup lemon yogurt
3 eggs

PREHEAT oven to 325 degrees. Lightly grease and flour a tube pan and set aside.

Sift the dry ingredients together and place in a large bowl. Beat the eggs, shortening and butter; until light and fluffy. Add the dry ingredients a little at a time and mix well. Now add the lemon yogurt and beat for 3 minutes.

Pour into the prepared pan and bake for 50-60 minutes, or when a toothpick inserted in the center of the cake comes out clean. Poke a few holes in the cake with a toothpick or knife.

LEMON GLAZE:
Juice of 1 lemon
1 cup powdered sugar
1/2 tsp fresh lemon zest

Mix the lemon juice with the powdered sugar and drizzle over warm pound cake. Sprinkle with lemon zest.




Here's another homemade pound cake recipe with a twist. Buttery, rich dense and almost velvety are a few words that come to mind when I eat this homemade cream cheese pound cake. You must make this cake 1 day before serving. This cake freezes well and is so easy to make.

CREAMY AND VELVETY CREAM CHEESE POUND CAKE

1 pkg cream cheese, softened
1-1/2 cups butter, softened
3 cups white sugar
6 eggs
3 cups flour, sifted
1/2 tsp salt
1 TBS pure vanilla extract

PREHEAT oven to 300 degrees (nothing higher) and grease a tube or bundt pan.

Cream the first 3 ingredients together until light and fluffy. Add the eggs one at a time, and mix well after each addition. SLOWLY add the flour and vanilla and mix well. Bake for approximately 1-1/2 hours. Moist and scrumptious homemade poundcake recipe.
