Homemade Manicotti
MANICOTTI PASTA RECIPE

1-1/2 lbs Basic Pasta Dough your favorite filling
2 cups favorite homemade tomato sauce
grated Romano cheese
shredded mozzarella cheese

Divide the dough into 6 equal parts and roll out on a lightly floured surface into squares about 9x10 inches. Cut square in half, and cut each half into 3 equal strips.

PREHEAT oven to 375 degrees.

Cook pasta in a pot of boiling salt water for 3 minutes. Remove to colander and run under cold water. Drain on a clean towel.

Place 2 tablespoons of filling on each strip and roll up from the long side. Put seam down in a baking pan. Add 1/4 inch of hot water to the pan and cover the manicotti with 2 cups of your favorite tomato sauce. Sprinkle with Romano cheese.

Cover firmly with foil and bake for 1 hour. Remove the foil and sprinkle with mozzarella cheese. Bake, uncovered, for 10 minutes or more until the cheese is melted. You may top this with additional sauce is you want.

FRESH CHICKEN SALAD RECIPE

3/4 cup homemade mayonnaise
1/4 cup homemade cherry conserve
1/2 tsp curry powder
1/4 tsp salt
12 ounces crushed pineapple, well drained and squeezed dry
1/4 tsp lemon juice
2 cups finely chopped cooked chicken
1 cup finely diced celery
1/2 cup sliced green onion

First combine the mayonnaise, chutney, curry powder and salt. Add remaining ingredients - chill before serving.
