If you like horseradish, you will LOVE these homemade horseradish recipes. Perfect for sauces and dips, or you can just eat it on a cracker. Offering many homemade condiment recipes that are outstanding - and will save you money.






HOMEMADE HORSERADISH

1 cup finely shredded horseradish root (about 4 ounces)
6 TBS white wine vinegar
½ cup water
2 TBS sugar
1/8 teaspoon black pepper
1 small jalapeno pepper, seeded and finely diced (optional)

Shred horseradish root.

Combine remaining ingredients in a medium-size bowl. Add grated horseradish and mix well. Transfer to a covered container and refrigerate overnight.






GRANDMA'S OLD FASHIONED HORSERADISH RECIPE

1 cup horseradish root, peeled and sliced thin
3/4 cup white vinegar
2 white sugar
1/4 tsp kosher salt

Process all ingredients in a food processor or blender. This mixture is hot - turn your head away from the appliance when taking the lid off.

At this point, you can put it in a glass container and store in the refrigerator, or you may can it. Just pack into a sterilized bottle and seal.

Refrigerate in a glass container with a tight fitting lid. Store the bottle on it's top and turn over every week or so to keep the horseradish from drying out.





RECIPE FOR THE POLISH VARIETY

12 oz horseradish, peeled and grated
15 oz canned beets
1/2 cup homemade white vinegar
1/2 cup white sugar

In blender combine sugar and vinegar. Add some of the liquid from the beets; pulse.

Slowly add the horseradish root slices until all of them have been processed. Add about half the reserved beets and continue processing until all the horseradish has been blended.

NOTE
The liquid can be adjusted slightly depending on the size of your horseradish root; however, the amount of vinegar and sugar you use should remain equal.



You may mix the horseradish with homemade ketchup for a great cocktail shrimp dip.

Or mix with homemade mayonnaise, and you now have a terrific sandwich spread (I'm thinking roast beef).

Add 1 teaspoon of horseradish with 1 cup of homemade sour cream, and you have an excellent prime rib sauce.

FRESH CHICKEN SALAD RECIPE

3/4 cup homemade mayonnaise
1/4 cup homemade cherry conserve
1/2 tsp curry powder
1/4 tsp salt
12 ounces crushed pineapple, well drained and squeezed dry
1/4 tsp lemon juice
2 cups finely chopped cooked chicken
1 cup finely diced celery
1/2 cup sliced green onion

First combine the mayonnaise, chutney, curry powder and salt. Add remaining ingredients - chill before serving.
