HOMEMADE HO HO CAKE

Gotta love this beautiful ho ho cake. For those of you in a hurry, you may use your favorite chocolate cake mix and prepare according to package directions. I use my homemade cake recipe - much better; recipe below.




Ho Ho Cake
1 pkg Chocolate Cake Mix (or use homemade recipe below)

FILLING
5 TBS flour
1-1/4 cup milk
1 cup white sugar
1/2 cup homemade unsalted butter
1 cup Crisco shortening
1 TBS pure vanilla extract

FROSTING
1 egg
1-1/2 tsp hot water
three (1oz) squares unsweetened chocolate, melted
1-3/4 cups powdered sugar, sifted

Make devil's food cake according to package directions and bake in three 9" cake pans that have been greased and floured. Cool completely.

Combine flour and milk in saucepan and cook, stirring constantly, until thick. Set aside and cool completely. In a mixing bowl, add the white sugar, butter, and shortening; beating for 10-12 minutes until it is light and fluffy. Add cooled milk mixture, and mix well. Spread filling between layers and chill the cake for at least 2 hours.

In a bowl, beat egg. Add vanilla, melted chocolate, hot water, powdered sugar, and beat until fluffy. Frost cake and refrigerate.





Use this homemade recipe for the Ho Ho cake instead of a mix.

HOMEMADE CHOCOLATE CAKE

3 cups brown sugar, packed
1 cup homemade unsalted butter, at room temperature
4 eggs at room temperature
2 tsp pure vanilla extract
2-2/3 cup flour
3/4 cup baking cocoa
1 TBS baking soda
1/2 tsp salt
3/4 cup homemade sour cream
1/2 cup heavy cream
1-1/3 cups boiling water

PREHEAT oven to 350 degrees. Grease three 9" pie pans and flour; tapping to remove excess. Place parchment paper or a silicone mat in the bottom of each cake pan.

In a mixing bowl, cream brown sugar and butter. Add eggs, one at a time, beating well after each addition. Beat on high speed until light and fluffy. Blend in vanilla. Combine flour, cocoa, baking soda and salt; add alternately with sour cream to creamed mixture.

Mix on low just until combined. Stir in water until blended. Pour into the prepared cake pans and bake for 35 minutes. Cool in pans 10 minutes; remove to wire racks to cool completely.

FEATURED RECIPE:


HOMEMADE STRAWBERRY MUFFIN RECIPE

2 cups flour
1 cup white sugar
1 TBS baking powder
1/2 tsp salt
2 eggs, slightly beaten
1 cup milk or half-and-half
1/2 cup vegetable oil
1/2 tsp strawberry extract (optional)
1-1/2 cups fresh strawberries, quartered

Top the muffins with my Old-Fashioned Cream Cheese Frosting
(only make half of the recipe)

whole strawberries, halved (garnish)
powdered sugar (garnish)

PREHEAT oven to 400 degrees. Grease or use paper lined muffin tin; set aside.

In a large bowl, combine the flour, sugar, baking powder and salt. Combine eggs, milk, oil and strawberry extract. Stir into the dry ingredients and mix JUST until incorporated (there will be lumps). Fold in quartered strawberries.

Spoon into greased muffin tins and sprinkle tops lightly with white sugar. Bake for 18 to 20 minutes or until golden brown.

Sprinkle lightly with powdered sugar and top with a dollop of cream cheese frosting. Nestle a halved strawberry on top and smile. You just created a "good thing."


Strawberry Banana Muffins
add 3/4 cups strawberries and
3/4 cup chopped banana


Strawberry Rhubarb Muffins
add 1 cup strawberries and
1/2 cup chopped rhubarb
