This is a easy chili recipe and so good on a rainy, cold day. Serve with a grilled cheese and you have a meal put together for your family in no time.

Make this the day before serving. You need to refrigerate it overnight for best flavor.




Easy Chili Recipe
HOMEMADE CHILI

1 lb ground beef
1 lb ground pork
1 TBS canola oil
1 large onion, chopped (save 1/4 of raw chopped onion for garnish)
2 jalapeno peppers, seeded and chopped


2 cans chili beans
1 can red kidney beans
1 can (14.5oz) tomatoes, diced
1 cup homemade tomato juice
1 can (8oz) homemade tomato sauce
1 can (6oz) tomato paste
1/4 cup homemade chili powder
2 TBS homemade brown sugar, packed
1 TBS cumin
1 TBS salt
2 tsp freshly ground black pepper
1 tsp homemade garlic powder
2 tsp homemade onion powder
1/2 tsp homemade cayenne pepper
shredded cheddar cheese, for garnish

You may also serve with sour cream, sliced jalapeno slices, or saltines.

Fry ground beef and ground pork in a heavy skillet over medium-high until cooked through. Drain and set aside.

In large pot, heat the canola oil and add 3/4 of the chopped onion and the jalapeno pepper; sautéing until tender.

Add the drained ground beef/pork mixture back into the pot and add the remaining ingredients; except the cheese. Simmer for at least 2 hours and refrigerate completely before serving. Just reheat again and add the cheddar cheese on top; sprinkled with chopped onion.

NOTE: You may simmer the chili in a crock pot on high for a few hours the night before, and reheat chili again in the slow cooker the next day. Just place the crock in the refrigerator overnight. Less dishes. This is great with my homemade cornbread.

FRESH CHICKEN SALAD RECIPE

3/4 cup homemade mayonnaise
1/4 cup homemade cherry conserve
1/2 tsp curry powder
1/4 tsp salt
12 ounces crushed pineapple, well drained and squeezed dry
1/4 tsp lemon juice
2 cups finely chopped cooked chicken
1 cup finely diced celery
1/2 cup sliced green onion

First combine the mayonnaise, chutney, curry powder and salt. Add remaining ingredients - chill before serving.
