DATE NUT BREAD RECIPE

Keep this date nut bread recipe handy. It's so moist - you'll agree after you take your first bite. You can top this with cream cheese or drizzle it with a wonderful glaze. Offering many quick bread recipes for you to try.

RECIPE FOR DATE NUT BREAD

6 cups flour
1 pkt rapid rising yeast
2 tsp white sugar
2 cups milk
1 cup brown sugar
1 tsp salt
1/2 cup butter, melted
2 eggs
1 cup chopped dates
1 cup chopped nuts

Place yeast in a small bow and add sugar with 4 tablespoons of warm water. Allow to stand for 15 minutes.

Scald milk and add brown sugar, salt and melted butter. When butter is lukewarm add with the beaten eggs and yeast mixture. Now add dates, nuts and flour; mix well.

Turn out on a floured surface and knead for 5 to 10 minutes or until satiny. Put in a greased bowl and turn to cover all. Cover with a towel and let rise until doubled in size.

Knead again until smooth and satiny and allow to rise again. Shape into two loaves and place in prepared baking pans. Let rise for 30 minutes.

Meanwhile, PREHEAT oven to 350 degrees. Grease two loaf pans. Bake for approximately 50 minutes. Drizzle with glaze.


GLAZE

1/4 cup homemade unsalted butter
2 cups homemade powdered sugar
2 TBS milk
1/2 tsp homemade pure vanilla extract

Melt butter in small saucepan and add to the powdered sugar. Add the milk and vanilla extract. Beat until smooth and creamy, adding more milk until smooth and creamy.

FRESH CHICKEN SALAD RECIPE

3/4 cup homemade mayonnaise
1/4 cup homemade cherry conserve
1/2 tsp curry powder
1/4 tsp salt
12 ounces crushed pineapple, well drained and squeezed dry
1/4 tsp lemon juice
2 cups finely chopped cooked chicken
1 cup finely diced celery
1/2 cup sliced green onion

First combine the mayonnaise, chutney, curry powder and salt. Add remaining ingredients - chill before serving.
