Scrumptious Dessert Recipes

This date cookie recipe goes back at least 90 years and still the best I have tasted. These cookies are addicting and delicious. I also offer many old fashioned cookie recipes for you to try at home.

OLD FASHIONED DATE COOKIES

I love these cookies and you will too once you taste these homemade morsels. Thanks Deet, I miss you. By the way, scant means "not quite" or "almost."

Cookies
1 cup butter
2 cups homemade brown sugar, packed
3 eggs, beaten
1/2 cup cold water
1 tsp homemade pure vanilla extract
3-1/2 cups flour
1/2 tsp salt
1 tsp baking soda
1/4 tsp cinnamon

Filling
2 cups dates, cut up
scant 3/4 cup white sugar
3/4 cup water
1/2 cup nuts, chopped

PREHEAT oven to 375 degrees and cover cookie sheets with parchment or waxed paper, curled side down.

Cream butter and sugar until light and fluffy; add beaten eggs. Add the water and vanilla - beat well. Add all dry ingredients and chill one hour in refrigerator.

Filling
Cook the dates with the white sugar and water until thickened. Add the 1/2 cup nuts and cool.

Drop 1 teaspoon of cookie dough (no more) on the baking sheet, and drop 1/2 teaspoon of filling on top. Cover filling with 1/2 teaspoon of cookie dough; repeat.

Bake for 10 to 12 minutes. Cool on parchment paper.

FRESH CHICKEN SALAD RECIPE

3/4 cup homemade mayonnaise
1/4 cup homemade cherry conserve
1/2 tsp curry powder
1/4 tsp salt
12 ounces crushed pineapple, well drained and squeezed dry
1/4 tsp lemon juice
2 cups finely chopped cooked chicken
1 cup finely diced celery
1/2 cup sliced green onion

First combine the mayonnaise, chutney, curry powder and salt. Add remaining ingredients - chill before serving.
