CORN DOG CASSEROLE RECIPE

You got to love this easy corn dog casserole recipe. Why? If you love the taste of corn dogs at the fair - you will flip for this treat. Make it ahead of time and have the kids warm it up when they get home; that is if there is any left...




Corn Dog Casserole
RECIPE FOR CORN DOG CASSEROLE

2 cups celery, thinly sliced
1 cup onion, thinly sliced
2 TBS butter


1-1/2 lbs hot dogs (or turkey dogs), cut lengthwise into quarters
1-1/2 cups milk
2 eggs
1-1/2 tsp ground sage
two (8-1/2oz) pkgs corn bread/muffin mix
2 cups sharp cheddar cheese, divided in half

PREHEAT oven to 400 degrees and spray a shallow baking dish with vegetable oil; set aside.

In a pan, sauté the celery, onion, and hot dogs together until celery is tender. Reserve one cup of this mixture.

Whisk together the milk, eggs and sage. Season with salt and pepper and add to the hot dog mixture (make sure to reserve one cup first). Add the corn bread mixes and add 1 cup of the cheese. Spread into a baking dish.

Add the reserved hot dog mixture and spread evenly; topping it off with the remaining cheese. Bake for 30 minutes or until golden brown. Stand back, because you will get knocked down when they come running to eat this gem. Simple and inexpensive.

FRESH CHICKEN SALAD RECIPE

3/4 cup homemade mayonnaise
1/4 cup homemade cherry conserve
1/2 tsp curry powder
1/4 tsp salt
12 ounces crushed pineapple, well drained and squeezed dry
1/4 tsp lemon juice
2 cups finely chopped cooked chicken
1 cup finely diced celery
1/2 cup sliced green onion

First combine the mayonnaise, chutney, curry powder and salt. Add remaining ingredients - chill before serving.
