Refreshing Margarita and Daiquiri Recipes

Homemade Baileys Irish Cream, Peach Schnapps, Kahlua and Blueberry Liqueur

I was a bartender many moons ago, and saved some of my cocktail drink recipes (these are excellent mixed drink recipes). My alcoholic drink recipes include the BEST martini recipes.

Margarita Recipes

The first of many of my cocktail drink recipes (toddy for the body) - is simple to make and a staple when making cocktails and beverages alike. It's for simple syrup. I keep mine in a covered glass jar in the refrigerator. If you are making lemonade or sweet tea, this comes in handy also.

SIMPLE SYRUP

2 cups water
2 cups white sugar

Combine in a small sauce and bring to a boil. Simmer until all sugar is dissolved. Cool, and store in a airtight container.

MARGARITA
Okay, I'll admit it - this is my favorite cocktail drink recipe - and I am listing it first. I hope you enjoy this mixed drink recipe as much as I do. This is only for one drink, so you probably want to double or triple it...

3 oz good tequila (I use Patron Silver)
2 oz lime juice, freshly squeezed
1 oz Simple Syrup, see recipe above
1/2 tsp orange liqueur, optional

Fill a shaker with ice and add the tequila, lime juice and simple syrup. Cover and shake until chilled....about 30-45 seconds.

For the rim of the glass:

zest of lime
2 TBS kosher salt
2 TBS white sugar

Place in a small blender or food processor and pulse together. Pour onto a plate. Rim the glass with a cut piece of lime, and then dip it into the above mixture.

Fill your rimmed glasses with ice and add the margarita. Add a slice of lime to the side of the glass. (Just cut a slice half way through and attach to rim). Awesome cocktail drink recipe isn't it?

Refreshing cocktail drink recipe for those hot summer days.

STRAWBERRY DAIQUIRI SLUSH

3 (16oz) pkgs frozen strawberries, or 6 cups of fresh strawberries, sliced.
3 (12oz) pkgs frozen lemonade concentrate
3 cups rum
7-Up for mixer

Blend the strawberries, lemonade and rum in a food processor or mixer. Freeze overnight, and serve with the 7-Up.

Another cocktail recipe that is DELICIOUS.

MILKY WAY MARTINIS

1 cup vanilla vodka
1 cup Godiva chocolate flavored liqueur
1/2 cup Bailey's Irish cream
splash of cream

Fill the martini glass with ice water and set aside to chill.

In a shaker filled with ice, add the ingredients and shake until it turns frosty on the outside. Pour into your prepared glass and enjoy. Makes 4.

How To Make Limoncello LIMONCELLO COCKTAIL DRINK RECIPE

10 lemons
1 liter of good vodka
3 cups white sugar
4 cups water

Peel the lemons (make sure to leave the pith or bitter white part on the lemons, or you will have a bitter drink), and place the peel in a tall jar. Add the vodka (I recommend Grey Goose) and cover loosely for one week to infuse.

After 7 days, combine the sugar and water in a saucepan and boil for 15 minutes. DO NOT STIR. Take off heat and cool. Stir the vodka in with the sugar water, and strain into glass bottles that you want to serve this in - and cork it. Let sit for two weeks at room temperature.

NOTE: Before serving, cut a half gallon milk carton in half and place the limoncello bottle in the center and fill half way with water. Add flowers or lemon slices and fill to the top. Freeze everything overnight, and when ready to serve, just peel off the carton and place in a bowl or plate. Serve in glasses or shot glasses. This keeps it chilled for quite a while, and looks lovely!

PEACH MARGARITA

2 parts Patron Silver tequila
1 lime, juiced
1-1/2 parts Peach Schnapps
1/4 cup peach puree
2 peaches, sliced for garnish
Ice

Fill the blender 3/4 full of ice. Add all of the ingredients except the sliced peaches. Blend and serve with a sliced peach. You may use a peach to wet the rim of the glass and dunk the glass in white sugar before adding the margarita. Refreshing cocktail drink recipe.

Of all my mango cocktail drink recipes...this one is the bomb!

MANGORITA

1-1/2 oz silver tequila
1 oz triple sec
1-1/2 oz fresh lemon juice
2 oz simple syrup; see first recipe
3/4 cup partially frozen mangoes, or mango nectar

Place all ingredients in a blender and process into smooth. Rim your glass with a lemon and dunk in white sugar. Pour into a glass filled with ice cubes; or you can put ice cubes in the blender and have a frozen margarita.

A tasty twist for this mixed drink recipe.

TEQUILA "PINEAPPLE" SUNRISE

6 oz Patron Silver tequila
12 oz pineapple juice
2 oz lime juice
2 tsp grenadine syrup
IcePineapple slices for garnish

Combine the liquid ingredients in a shaker(two batches) with the ice. Strain and garnish with a pineapple slice.

More PINEAPPLE Recipes

Okay, you have the recipe for the pineapple upside down cake on a platter -- how about having it in a glass? You'll love this simple yet DELICIOUS cocktail drink recipe on a summer evening...

PINEAPPLE UPSIDE DOWN MARTINI

1/3 cup Vanilla Dr. McGillicuddy's Schnapps, chilled (put it in the freezer a couple hours before serving)
2/3 cup pineapple juice, chilled
1 dash grenadine syrup
2 fresh pineapple wedges, for garnish
2 maraschino cherries, for garnish

Fill your glass full of ice and add a little water, to chill.Pour the first 3 ingredients in a shaker full of ice. Shake until frost forms on the outside of the shaker, and strain into two martini glasses. Garnish with pineapple and a cherry on a skewer.

How To Make Blueberry Margarita Got fresh blueberries? This cocktail drink recipe is awesome (and good for you too!)...

BLUEBERRY MARGARITA

2 cups ice
1 cup frozen blueberries
1 cup blueberry nectar
1/4 cup seltzer
2 TBS frozen limeade
1 TBS lime juice
3 ounces tequila
1 lime wedge
Coarse salt

Combine ice, blueberries, blueberry nectar, seltzer, limeade, lime juice and tequila, if using, in a blender and blend until smooth. Rub rim of 2 glasses with lime wedge and dip in salt. Divide the margarita between the prepared glasses and serve.

BLUEBERRY VODKA MARTINIS

1 liter of Grey Goose vodka
1 pint of blueberries, rinsed and dried
1 cup raspberry flavored liqueur
1 lime, juiced

blueberries for garnish

Pour out 1/3 of the bottle of vodka and place in a jar, set aside. Score each blueberry with a quick nick and place in the grey goose vodka bottle. With the vodka that was set aside, fill the goose bottle just below the neck of the bottle. Add enough raspberry liqueur to fill the bottle. Let sit in a dark place for 14 days. (I know, but the wait is worth it.)

To make the martinis: In a cocktail shaker, fill with ice and combine 2 parts blueberry liquor with one part raspberry liqueur and a dash of lime juice. Shake until frost forms on the outside of the shaker and serve in a martini glass. Prick the blueberries with a cocktail skewer and place in the martini. May also add a twist of lime zest. Lovely cocktail drink recipe.

Just stir in the peppermint and enjoy.

In a hurry?

Use one (1 ounce) envelope instant hot chocolate made according to directions. Stir in 1 ounce of peppermint. So good.

FEATURED RECIPE:

TIPS TO Make PERFECT Chocolate Covered Strawberries

SECRET #1
There are many way to prepare these strawberries, but I am going to give you my easy methods. When you are melting the chocolate over a double boiler, don't let the water touch the bottom of your upper pan. Heat until only 1/2 of the chocolate is melted, then remove from heat and stir gently until it is all melted.

The chocolate should actually be cool or tepid to the touch. If it's hot, chances are it will seize up and thicken. If it does that, no amount of heating or stirring will fix it.

If you don't have a double-boiler, use a saucepan - bring the water to a boil, and then use a stainless steel bowl to rest in the saucepan to melt the chocolate.

SECRET #2
Strawberries are grown with many pesticides, so rinse the strawberries first with a veggie wash, and let them drain on paper towels until they were thoroughly dry so the chocolate would adhere properly. Any moisture would have interfered with the chocolate adhering.

SECRET #3
Spike the strawberries! Fill a syringe with a sweet white dessert wine, and slowly inject the wine into the strawberries from near the stem (after you've done the dipping in chocolate.) You want to inject enough wine to saturate the berries, but watch not to add too much otherwise they end up becoming runny. These are always a hit when I bring them to dinner parties.

SECRET #4
Pierce the strawberries on the stem side with a toothpick. Holding the strawberry by the toothpick, dip into the chocolate mixture. Turn the strawberries upside down and insert the toothpick into Styrofoam for the chocolate to cool.

A delicious twist on my favorite red velvet cake recipe. Yum.

HOMEMADE RED VELVET CHEESECAKE RECIPE

Ingredients

CRUST:
1-1/2 cups graham cracker crumbs
1/4 cup butter, melted
1-1/2 TBS white sugar
shaved chocolate bar

CHEESECAKE:
3 (8oz) pkgs cream cheese, softened
1-1/2 cups white sugar
4 eggs, beaten
3 TBS cocoa, unsweetened
1 cup sour cream
1/2 cup buttermilk*
1 TBS pure vanilla extract
1 tsp white vinegar
2 (1oz) bottles of red food coloring

TOPPING:
3 oz cream cheese, softened
1/4 cup butter, softened
2 cups powdered sugar, sifted
2 tsp pure vanilla extract
shaved chocolate bar, for garnish

Directions

PREHEAT oven to 325 degrees. The cake is baked with a water bath to prevent cracking. Wrap a large pan with foil (big enough for the spring form pan to fit in).

Mix the graham crackers and sugar together and add the melted butter. Mix with a fork and press into a 9 inch spring form pan. Sprinkle the bottom of the crust with chocolate shavings from a candy bar.

Beat 3 packages of cream cheese with 1-1/2 cups white sugar until fluffy. Add the remaining ingredients and mix well. Pour into the prepared spring form pan and place in the center of the foil covered pan. Fill with water.

Bake for 10 minutes and lower oven temperature to 300 degrees and bake for 70-80 minutes. The cheesecake is done when the center is firm. Cool completely on a wire rack.

TOPPING:
Beat the cream cheese with the butter until fluffy. Add the powdered sugar and vanilla extract and mix until smooth and creamy. Spread evenly over the top of the cooled cheesecake. Garnish with the shaved chocolate bar.

*Buttermilk:
Place 1-1/2 tsp vinegar or lemon juice in 1/2 measuring cup and fill remainder with milk. Wait 15 minutes, stir, and it's ready for this recipe.
