CHOCOLATE ZUCCHINI CAKE RECIPE

If you have a bunch of zucchini from the garden, then you need to try my chocolate zucchini cake recipe. So moist with a beautiful rich flavor, it will become a family favorite. More homemade cake recipes that you must try at the bottom of the page.




Chocolate Zucchini Cake Recipe
HOMEMADE CHOCOLATE ZUCCHINI CAKE

2-1/2 cups flour
1/2 cup unsweetened cocoa powder
2-1/2 tsp baking powder
1-1/2 tsp baking soda
1 tsp salt
1 tsp cinnamon
3/4 cup homemade unsalted butter
2 cups white sugar
3 eggs
2 tsp homemade pure vanilla extract
1/2 cup milk
3 cups finely grated zucchini
1 TBS orange zest
1 tsp orange extract (optional)
1 cup chopped walnuts

Glaze
1 cups homemade powdered sugar
1/2 cup orange juice
1/2 tsp orange extract (optional)
1 tsp homemade pure vanilla extract

PREHEAT oven to 350 degrees. Grease and flour bundt pan; set aside.

Sift the flour, cocoa, baking powder, soda, salt and cinnamon together in a bowl; set aside.

In a mixing bowl, cream the butter and sugar together until fluffy. Add eggs, one at a time, mixing well after each addition. Add vanilla and orange extract; beat. Add dry ingredients alternately with milk and mix well. Press all liquid out of the zucchini and fold it in with the orange zest and nuts.

Bake for 50 to 60 minutes, or until a toothpick comes out clean. Allow to cool and drizzle with glaze.

To make the glaze: In a small bowl mix together sugar, orange juice and vanilla. Invert cake onto serving dish, then pour glaze over.

FRESH CHICKEN SALAD RECIPE

3/4 cup homemade mayonnaise
1/4 cup homemade cherry conserve
1/2 tsp curry powder
1/4 tsp salt
12 ounces crushed pineapple, well drained and squeezed dry
1/4 tsp lemon juice
2 cups finely chopped cooked chicken
1 cup finely diced celery
1/2 cup sliced green onion

First combine the mayonnaise, chutney, curry powder and salt. Add remaining ingredients - chill before serving.
