HOMEMADE CHOCOLATE APPLESAUCE CAKE

Yum. This chocolate applesauce cake is so moist and tender. The orange frosting is outstanding and really makes the cake. I offer many homemade cake recipes that you will want to try.




chocolate applesauce cake
2 cups flour
1 tsp baking powder
1 tsp baking soda
1 TBS cornstarch
1/2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp allspice
1/2 tsp salt
1/2 cup butter
1 cup white sugar
1 egg, beaten well
1-1/2 squares chocolate, melted and cooled
1 cup homemade applesauce
1/2 cup water
2/3 cup chopped nuts
1/2 tsp homemade pure vanilla extract

PREHEAT oven to 325 degrees. Grease and flour 8 inch tube pan.

Sift flour, measure and then sift with baking powder, baking soda, cornstarch, salt and the spices. Cream the butter and sugar for 5 minutes. Add well beaten egg and then the cooled chocolate. Add dry ingredients alternately with applesauce and water. Add nuts which have been dredged in part of the measured flour. Add vanilla.

Bake for 325 degree for one hour. Frost with orange frosting below.


ORANGE FROSTING RECIPE

2 TBS butter
1-3/4 cups homemade powdered sugar, divided
1 egg yolk
2-1/2 TBS orange juice
1/2 tsp grated orange rind
1/2 tsp grated lemon rind

Cream the butter with 1/2 cup powdered sugar. Add the egg yolk; mix well. Then add the orange juice, orange and lemon rind, stir to mix. Add remaining 1-1/4 cups powdered sugar. Cream well and frost cake.

FRESH CHICKEN SALAD RECIPE

3/4 cup homemade mayonnaise
1/4 cup homemade cherry conserve
1/2 tsp curry powder
1/4 tsp salt
12 ounces crushed pineapple, well drained and squeezed dry
1/4 tsp lemon juice
2 cups finely chopped cooked chicken
1 cup finely diced celery
1/2 cup sliced green onion

First combine the mayonnaise, chutney, curry powder and salt. Add remaining ingredients - chill before serving.
