HOMEMADE CARAMEL DATE CAKE

This moist caramel date cake is a delight. The cake has a wonderful date flavor and topped in caramel sauce - heaven on a fork. This homemade cake recipe is easy to prepare too. I've got more where that came from below...




Caramel Date Cake
2 cups flour
2 cups homemade brown sugar, packed
1/2 cup butter
1/2 cup dates, finely chopped
1/2 cup nuts, chopped
1 cup homemade buttermilk
1 egg, beaten well
1 tsp baking soda
1 tsp homemade pure vanilla extract
3/4 cup caramel sauce.

PREHEAT oven to 350 degrees. Grease and flour 8x8 pan.

Mix flour, sugar and butter together and reserve 3/4 cup of this mixture for the topping; set aside.

To the remaining mixture add: chopped dates and nuts. Combine well beaten egg, buttermilk, baking soda and flour to the mixture. Add the vanilla. Pour into the prepared cake pan. Sprinkle with 3/4 cup reserved crumbs. Bake for 50 minutes.

When the cake is done, poke some holes in the top with a fork. Pour caramel sauce over all.

FRESH CHICKEN SALAD RECIPE

3/4 cup homemade mayonnaise
1/4 cup homemade cherry conserve
1/2 tsp curry powder
1/4 tsp salt
12 ounces crushed pineapple, well drained and squeezed dry
1/4 tsp lemon juice
2 cups finely chopped cooked chicken
1 cup finely diced celery
1/2 cup sliced green onion

First combine the mayonnaise, chutney, curry powder and salt. Add remaining ingredients - chill before serving.
