This homemade burnt sugar cake is delicious. A hint of lemon and topped with brown sugar seven minute frosting; pure heaven. I offer many homemade cake recipes for you to try at the end of the page.
2 cups flour 1 cup white sugar 1/2 cup butter 2 eggs, separated 1 cup cold water 2 tsp baking powder 1/2 tsp salt 1 tsp lemon extract 2/3 cup white sugar 1/2 cup boiling water 1 heath candy bar, crushed for garnish
PREHEAT oven to 375 degrees. Grease and flour two 8 inch cake pans.
Cream the butter and sugar together for 5 minutes. Add the well beaten egg yolks. Add flour and water alternately. In a hot, dry skillet put 2/3 cup sugar and stir constantly until it melts and turns dark brown.
Add boiling water and stir until boiling until it spins a thread. Add this syrup to the batter and beat for five minutes. Add lemon extract and baking powder mixed with a little flour. Fold in stiffly beat egg whites.
Pour into prepared pans and bake for 25 minutes. Cool and ice with the following recipe. Then top with crushed heath bits.
This is my seven minute frosting made with brown sugar.
SEVEN MINUTE FROSTING
1 cup brown sugar 1/4 cup water 2 stiffly beaten egg whites
Cook sugar, water to soft-ball stage (236 degrees). Gradually add to whites, beating until mixture forms peaks.
3/4 cup homemade mayonnaise 1/4 cup homemade cherry conserve 1/2 tsp curry powder 1/4 tsp salt 12 ounces crushed pineapple, well drained and squeezed dry 1/4 tsp lemon juice 2 cups finely chopped cooked chicken 1 cup finely diced celery 1/2 cup sliced green onion
First combine the mayonnaise, chutney, curry powder and salt. Add remaining ingredients - chill before serving.
