BLUEBERRY COFFEE CAKE RECIPE

This blueberry coffee cake recipe is amazing and so easy to make. Offering the BEST coffee cake recipes and more homemade recipes to choose from.

Blueberry Coffee Cake Recipe

If you do use frozen blueberries do not thaw the berries. Place them on a paper towel to absorb the frost if there is any.

Mix them with 1 tablespoon of flour. When the batter is ready, very gently fold the floured berries into the batter.

The blueberries will not bleed and not end up on the bottom of the pan.

HOMEMADE BLUEBERRY COFFEE CAKE RECIPE

1/4 cup homemade unsalted butter, softened
2 tsp homemade pure vanilla extract
3/4 cup white sugar
1 egg
1/2 cup milk
2 cups flour
2 tsp baking powder
1/2 tsp salt
2 cups blueberries

Topping
3/4 cup homemade brown sugar, packed
3 TBS flour
1/2 cup slivered almonds
3 TBS butter

PREHEAT oven to 375 degrees. Grease and flour a 9 inch spring-form pan.

Sift together the flour, baking powder and salt. Set aside. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the egg. Beat in the flour mixture alternately with the milk, mixing just until incorporated.

Stir in the blueberries. Pour batter into prepared pan. In a small bowl, combine brown sugar, 3 tablespoons flour, cinnamon and chopped pecans. Cut in butter until crumbly. Sprinkle over the batter.

Bake in the preheated oven for 40 to 45 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.

Use my homemade whipped cream to dollop on top.
