Quick Easy Dinner Recipes

You've found the best meatloaf recipe - so simple to prepare and juicy. You will be begged for this easy meatloaf recipe. Serve with mashed potatoes and crusty bread.

Best Meatloaf Recipe This old fashioned meatloaf recipe has a different twist. Anyone who tries it loves it. For parties, make meatballs instead of the loaf, bake them and place in a crock pot with the sauce doubled.

SWEET AND SOUR MEATLOAF

1 lb ground sirloin
1/2 lb hot Italian sausage
1/2 cup sharp cheddar cheese, shredded fancy (thin)
1 cup bread crumbs
1 tsp sea salt
1/4 tsp freshly ground black pepper
2 eggs
3 tsp dried minced onion
3 tsp minced garlic
2 cups homemade tomato sauce

Sauce
4 TBS homemade brown sugar, packed
4 TBS cider vinegar
1 cup white sugar
4 tsp yellow mustard

PREHEAT oven to 350 degrees.

In a large bowl combine the beef, sausage, cheese, bread crumbs, sea salt, pepper, eggs, onion flakes, and 1/2 of one of the 15oz cans of tomato sauce. Mix together carefully - not to overwork the meat, as it will toughen it. Pat into a loaf and place in a large casserole dish. Bake for 45 minutes.

In the meantime, in a saucepan over medium heat; combine the remaining tomato sauce and 1/2 of the unopened can. (You will have 1/2 of a can of sauce leftover that will not be used in this recipe) Add the brown sugar, vinegar, white sugar, and mustard. Bring to a slow boil and remove from the heat.

After the meatloaf is done, remove from the oven and carefully drain the fat from the pan. Now pour the sauce over the top of the meatloaf. Return to the oven and reduce heat to 350 degrees and bake an additional 20 minutes. Let sit for five minutes before serving.

2 eggs, slightly beaten
1 cup milk or half-and-half
1/2 cup vegetable oil

In a large bowl, combine the flour, sugar, baking powder and salt. Combine eggs, milk, oil and strawberry extract. Stir into the dry ingredients and mix JUST until incorporated (there will be lumps). Fold in quartered strawberries.

Spoon into greased muffin tins and sprinkle tops lightly with white sugar. Bake for 18 to 20 minutes or until golden brown.
