This is the BEST chili recipe. This recipe for chili produces a pot of delicious chili that is so good on a rainy or cold day.
Serve with a grilled cheese and you have a meal put together for your family in no time. Make the chili the day before you are planning to serve it. It needs to refrigerate overnight for best flavor.
HOMEMADE CHILI
1 lb ground beef 1 lb ground pork 1 TBS canola oil 1 large onion, chopped (save 1/4 of raw chopped onion for garnish) 2 jalapeno peppers, seeded and chopped 3 cans chili beans 1 can (14.5oz) tomatoes, diced 1 cup tomato juice 1 can (8oz) tomato sauce 6 ounces tomato paste 1 can (12oz) beer 1/4 cup chili powder 2 TBS brown sugar, packed 1 TBS cumin, or to taste 1 TBS salt 2 tsp freshly ground black pepper 1 tsp garlic powder 2 tsp onion powder 1/2 tsp homemade cayenne pepper, or to taste (optional)
shredded cheddar cheese, for garnish
You may also serve with sour cream, sliced jalapeno slices, Frito's or saltines.
Fry ground beef and ground pork in a heavy skillet over medium-high until cooked through. Drain and set aside.
In large pot, heat the canola oil and add 3/4 of the chopped onion and the jalapeno pepper; sautéing until tender.
Add the drained ground beef/pork mixture back into the pot and add the remaining ingredients; except the cheese. Simmer for at least 2 hours and refrigerate completely before serving. Just reheat again and add the cheddar cheese on top; sprinkled with chopped onion.
NOTE: You may simmer the chili in a crock pot on high for a few hours the night before, and reheat chili again in the slow cooker the next day. Just place the crock in the refrigerator overnight.
PREHEAT oven to 400 degrees. Grease or use paper lined muffin tin; set aside.
In a large bowl, combine the flour, sugar, baking powder and salt. Combine eggs, milk, oil and strawberry extract. Stir into the dry ingredients and mix JUST until incorporated (there will be lumps). Fold in quartered strawberries.
Spoon into greased muffin tins and sprinkle tops lightly with white sugar. Bake for 18 to 20 minutes or until golden brown.
Sprinkle lightly with powdered sugar and top with a dollop of cream cheese frosting. Nestle a halved strawberry on top and smile. You just created a "good thing."
