This homemade cake is just like the one Grandma used to make. Old fashioned cake so moist and topped with white fluffy frosting. Let's get baking.

Here's the Recipe:

Ingredients

2 cups flour
1/2 tsp salt
1 tsp baking soda
1-1/4 cups homemade brown sugar, packed
1/2 cup homemade unsalted butter
2 eggs
1/3 cup mashed banana
3 chocolate squares, melted and cooled


1 tsp homemade pure vanilla extract
1 cup homemade buttermilk

Directions

PREHEAT oven to 350 degrees. Grease and flour two 8" cake pans. (Cupcakes are also wonderful)

Cream butter and sugar together for 5 minutes until light and fluffy. Add eggs, one at a time, and beat well after each addition. Add banana, cooled chocolate and vanilla. Sift flour, measure, and then sift with salt and soda. Add alternately with buttermilk to make batter.

Bake in prepared cake pans and bake for 30 minutes. Leave in pans for 10 minutes, then remove and cool completely. Frost with fluffy white frosting below.




FLUFFY WHITE FROSTING

Ingredients

1 cup white sugar
1/3 cup water
1/4 tsp cream of tartar
2 egg whites
1 tsp pure vanilla extract
1/4 tsp pure almond extract (optional)

Directions

In a saucepan, stir together the sugar, water and cream of tartar. Cook over medium-high heat until the sugar is dissolved and the mixture is bubbly; this may take several minutes.

In a medium mixing bowl, whip the egg whites and vanilla to soft peaks (several minutes). Gradually add the sugar mixture while whipping constantly until stiff peaks form, about 7 to 10 minutes.

FRESH CHICKEN SALAD RECIPE

3/4 cup homemade mayonnaise
1/4 cup homemade cherry conserve
1/2 tsp curry powder
1/4 tsp salt
12 ounces crushed pineapple, well drained and squeezed dry
1/4 tsp lemon juice
2 cups finely chopped cooked chicken
1 cup finely diced celery
1/2 cup sliced green onion

First combine the mayonnaise, chutney, curry powder and salt. Add remaining ingredients - chill before serving.
