Apricot Dessert Recipes
APRICOT CAKE PARFAIT

1 can apricots
1-3/4 cup sugar
1 cup sifted flour
1 tsp baking soda1 TBS homemade unsalted butter, melted
1/2 cup homemade brown sugar, packed
1/4 cup chopped nuts
homemade vanilla ice cream
1 TBS cornstarch
1/4 tsp lemon juice
chopped apricots for garnish

PREHEAT oven to 350 degrees.

Drain apricots and save juice. Mash the fruit in a mixing bowl and add 1 cup sugar, flour, soda and melted butter. Place in a greased 9" cake pan. Sprinkle the top with brown sugar and nuts. You may add more of the brown sugar and nuts if you like.

Bake between 35 and 45 minutes or until a toothpick inserted in the cake comes out clean.

Let cake cool. Before serving, mix the apricot juice, remaining sugar, cornstarch and lemon in a small saucepan and cook until thickened.

To serve, place pieces of cake in the bottom of a parfait glass and add ice cream. Pour the apricot sauce over all and top with some chopped apricots.

APRICOT BETTY

1 cup bread crumbs
1/4 cup homemade brown sugar, packed
1/4 cup homemade unsalted butter
1/2 tsp cinnamon
1/4 tsp ginger
1/4 cup nonfat dry milk
3 cups apricot halves, drained

PREHEAT oven to 375 degrees.

Blend all ingredients, except apricots, in a bowl. Arrange the apricots in a greased baking dish and sprinkle with crumb mixture. Bake for 30 minutes and serve with whip cream.






APRICOT AND BANANA DELIGHT

6 green tipped bananas
12 ounces apricot jam
1/2 cup orange juice
1/4 cup spiced rum
1/2 cup flaked coconut
1 pint homemade vanilla ice cream, softened

PREHEAT oven to 375 degrees.

Peel bananas and place in a shallow baking dish. In a small saucepan, heat preserves until melted. Remove from heat and add orange juice and rum. Pour over bananas and sprinkle with coconut.

Bake, uncovered, for 20 minutes or until bananas are tender. Top with ice cream or whipped cream.






APRICOT PUDDING

3-3/4 cups apricots
1 cup sugar
2 TBS homemade unsalted butter
1 tsp baking powder
1 cup flour
1/2 cup milk

PREHEAT oven to 375 degrees and grease an 8 inch baking pan.

Put apricots in prepared baking pan and add 1/2 cup sugar and 1 TBS of butter. Mix the remaining butter, sugar, baking powder, flour and milk into the batter. Pour on top of the apricots. Bake for 45 minutes to 1 hour. Serve warm with vanilla ice cream.

FRESH CHICKEN SALAD RECIPE

3/4 cup homemade mayonnaise
1/4 cup homemade cherry conserve
1/2 tsp curry powder
1/4 tsp salt
12 ounces crushed pineapple, well drained and squeezed dry
1/4 tsp lemon juice
2 cups finely chopped cooked chicken
1 cup finely diced celery
1/2 cup sliced green onion

First combine the mayonnaise, chutney, curry powder and salt. Add remaining ingredients - chill before serving.
